Chateau Sainte Barbe was built between 1760 and 1770 by Jean-Baptist Lynch.
The Lynch family arrived in Bordeaux at the end of the 17th Century,
fleeing religious persecution in Ireland. The family owned several wine
merchants and Châteaux and reached the highest positions in Bordeaux
society. Jean-Baptiste Lynch himself became Mayor of Bordeaux between
1809 and 1815.

Parent of the Count of Armagnac, this family already owned a renowned

all the labels of château Patache d'Aux, and recalls the time when
human activity was based on the seasons.
Nowadays, lots of technical evolutions have been
integrated in our activity but we are still depending on climatic
changes as we stay humble in front of nature.

 The Sainte Barbe vineyards currently cover 30 hectares of gravelly, alluvial soils on the right bank of the Garonne, some 20km north of Bordeaux.
The majority of the vineyards have been replanted since we acquired the estate in 1999.
80% of the vineyard is made up of Merlot, with the remaining 20% divided between Cabernet Sauvignon and Cabernet Franc.
Plantation densities vary from 4500 to 5500 vines per hectare depending on the characteristics of the soil. The choice of rootstock (Riparia 101.14-3309) and quality clones (Merlot clones 181-343-347) was made specifically taking into account the soils of Sainte Barbe.

Daniel-Etienne Defaix owns one of the most ancient estate in Chablis (height centuries).
Already his ancestors in the Château de Faix in the Avallonais, cultivated vines at the 16th and 17th centuries. One thousand year ago, the monks of Pontigny selected great soils and created the Chablis appellation.
Etienne Paul Dujer de la Croix Defaix continued at the 18th century this winemaker tradition on Chablis. Daniel-Etienne DEFAIX perpetuates this secular and familial tradition on the monastic appellations.
