Aged in barrels, this wine, with its deep robe, offers a complex and intense nose, with notes of red fruits, cooked fruits and vanilla nuances.
All these aromas are steady in mouth with round tannins, before a velvety and spicy finish.

We picked the trail of the Chevalier d'Aux in 1632.
Parent of the Count of Armagnac, this family already owned a renowned
vineyard
where stagecoaches were stopping. They were called « pataches ». Since
then, this patache has become the logo of the company, it figures on
all the labels of château Patache d'Aux, and recalls the time when
human activity was based on the seasons.
Nowadays, lots of technical evolutions have been
integrated in our activity but we are still depending on climatic
changes as we stay humble in front of nature.

Grenache Blanc
Made from an old vine, this 100% Grenache Blanc has been vinified in new French oak casks, with an ageing on lees.
The robe is pleasant. The nose reveals discrete aromas.
In mouth, the aromatic evolution is clean, with a good length. A fat, well-balanced and mineral wine.

The discrete and elegant nose develops on strawberry and citrus-fruit aromas. In mouth, a pleasant lightness, a nice balance and a fleshy finish where very ripe red fruits play with taste-buds.

A beautiful constant crimson robe.
The intense and complex nose develops notes of red fruits, very ripe, cinnamon, liquorice. In mouth, notes of toast and vanilla.
The structure is fine, elegant, with melted tannins. Fat and length characterize the finish in mouth.

Burgundian style with medium body, notes of raspberries, and cherries
in a cool climate, resiny style with good depth, richness, and overall

style of Domaine de Charvin. Proprietor Coralie Goumarre produces the
wine at this estate in the northern sector of Chateauneuf du Pape near
the village of Courthezon."

Sainte Barbe is situated on the peninsular of Ambès 20 kms from Bordeaux.
Despite its proximity, this was a region that we had never visited
before. Over the last century the district had become industrialised
leaving only a scattering of large bourgeois homes that had been very
prestigeous in the nineteenth century.

 The Sainte Barbe vineyards currently cover 30 hectares of gravelly, alluvial soils on the right bank of the Garonne, some 20km north of Bordeaux.
The majority of the vineyards have been replanted since we acquired the estate in 1999.
80% of the vineyard is made up of Merlot, with the remaining 20% divided between Cabernet Sauvignon and Cabernet Franc.
Plantation densities vary from 4500 to 5500 vines per hectare depending on the characteristics of the soil. The choice of rootstock (Riparia 101.14-3309) and quality clones (Merlot clones 181-343-347) was made specifically taking into account the soils of Sainte Barbe.

Daniel-Etienne Defaix owns one of the most ancient estate in Chablis (height centuries).
Already his ancestors in the Château de Faix in the Avallonais, cultivated vines at the 16th and 17th centuries. One thousand year ago, the monks of Pontigny selected great soils and created the Chablis appellation.
Etienne Paul Dujer de la Croix Defaix continued at the 18th century this winemaker tradition on Chablis. Daniel-Etienne DEFAIX perpetuates this secular and familial tradition on the monastic appellations.

Around a beautiful mansion house built in 1834 the vineyard was created
between 1979 and 1982. Overlooking the estuary of the Gironde, it is
lying less then 10 kms from the Ocean which regulates its climate.
Private property of Jean-Michel Lapalu, the Château was added to the other possessions of the Lapalu Group in 1996.
