Profile : This wine comes from the Jurançon Sec AOP region, a blend of Petit Manseng and Gros Manseng grapes. Produced on the appellation's two main terroirs of amphitheatre-like terraces facing the Pyrénées, it is both fresh and full. Made from an old vine, this 100% Grenache Blanc has been vinified in new French oak casks, with an ageing on lees.
The robe is pleasant. The nose reveals discrete aromas.
In mouth, the aromatic evolution is clean, with a good length. A fat, well-balanced and mineral wine.

Daniel-Etienne Defaix owns one of the most ancient estate in Chablis (height centuries).
Already his ancestors in the Château de Faix in the Avallonais, cultivated vines at the 16th and 17th centuries. One thousand year ago, the monks of Pontigny selected great soils and created the Chablis appellation.
Etienne Paul Dujer de la Croix Defaix continued at the 18th century this winemaker tradition on Chablis. Daniel-Etienne DEFAIX perpetuates this secular and familial tradition on the monastic appellations.
